Wet Hop Ale
Hop supply uncertainty convinced us, as well as several customers, to plant cuttings in spring 2008 in hopes of harvesting a sizable crop by 2009. But what to do with the bright green cones that have appeared late this summer? Wet or undried hop beers are popular in the fall near the hop growing regions in the Northwest where they can pick and use them within hours—the beaujolais of the beer world. So we used Cascade hops from both our hop garden and new plantings at the Pangburn’s Corn Maze in a batch we brewed in late August. It’s a well-balanced, refined hoppy beer with a firm bitter finish.
